Be'chamel also known as white sauce or roux, is one of the basic sauces used in  Italian and French Cuisine. It mainly consists of white flour, butter and milk cooked together till thick. Spices like nutmeg and pepper may be added to enhance flavour.The main ingredient in white sauce is flour which contains gluten.


Many people can't tolerate gluten, a protein found in wheat, rye and barley, which may lead to abdominal pain stomach cramps and bloating. However gluten sensitivity involves a different response of the immune system as compared to cealiac. When a person with gluten intolerance ingests gluten, the body takes the protein in gluten as an invader, as a result fights it with inflammation.

Celiac on the other hand manifests itself with the immune system directly attacking the intestinal lining, in case of gluten ingestion. For celiacs gluten allergy can be life threatening if left untreated.
I came up with this fool proof gluten free recipe through trial and error. After trying several gluten free white sauce recipes in my kitchen this one was approved. I haven't used any store bought gluten
flour mix nor have I used corn flour because I don't find the taste of corn flour appealing in white sauce, that's my personal opinion.

This gluten free white sauce contains rice flour and no one who tastes this be'chamel can tell that it's made with rice flour.Below I have listed the ingredients for this sauce.

Method:


Cook together, butter flour and milk, add nutmeg, cook while whisking continuously. Continue cooking till smooth and thick. Add salt and pepper to taste. Remove from heat and serve as needed.
