Rasmalai is a dessert common to Pakistan, India and Bangladesh. It consists of soft cheese balls soaked in creamy chilled milk. Rasmalai is also made with homemade cottage cheese known as paneer. The milk in which cheese balls are added is cooked with sugar and cardamom.


This is my mother's recipe for rasmalai this recipe contains balls made from dried milk instead of cottage cheese. The milk is cooked on low heat until reduced to half and then balls are added. Both Rasmalai and Falooda Dessert are my preferred desserts on hot Summer days.

 Here is the step by step recipe for making homemade Rasmalai

whole milk1 1/2 liter
sugar to taste
cardamom pods split open5-6
kewra esencefew drops
dried milk powder1 cup
egg1 whole
vegetable oil1 tbsp
baking powder1 tsp
plain flour1 tbsp
pistachio, almonds or rose petals for garnishto taste


Method:


Place the milk with sugar and cardamom in a heavy based pan and let cook on low heat.

Meanwhile take a clean bowl add dried milk powder, egg, oil, BP and  flour mix all together.

Divide into small round balls and make an indentation in the center with the help of the index finger.

Start dropping into the cooked milk very carefully one by one.When all the balls have been added place the lid on the pan and cook for about seven minutes until the balls have doubled in size. At this point avoid using the spoon instead move the pan back and forth slowly so all the balls are cooked.

Your rasmalai is ready when the milk balls have softened right up to the center and have doubled in size. Garnish with pistachio or blanched almonds and rose petals Serve chilled..

Dried milk balls imbibed in sweetened, thickened milk.
