Chicken Rogan Josh


  Rogan Josh is a Kashmiri slow cooked spicy curry that is packed full of flavour. I am using chicken, but you can use lamb or beef. Every household has a different version of rogan josh. This is the way I make it. The authentic rogan josh is made from lamb or goat.

In my house chicken, rogan josh is always in demand!  My rogan josh recipe is really simple. I think it roughly takes 40 minutes to cook. There exist elaborated forms of rogan josh using dozens of spices.

In my recipe, you won't find too much preparation just layering of ingredients in a specific sequence and you will have a lip smacking dish on your table in forty minutes. Life is too short to spend hours in front of a cooking stove, don't you think?

So try to prepare delicious food in short time whenever possible. I know some dishes demand time but you can always create shortcuts couldn't you.

Ingredients:

500g chicken
4-5 tbsp oil
1 medium onions
2 medium tomatoes
1tsp chopped garlic
1tsp chopped ginger
1 brown cardamom
2-4 green cardamom
1 -2 stick cinnamon
1 tsp fennel
1 tsp methi seeds
1-2 tsp red chilli pepper
1/2 tsp turmeric
1 tsp cumin

Method:


Fry onions with oil in a heavy based pan, fry till golden brown add garlic, cook for two minutes before adding chopped ginger. Add black and green cardamom and cinnamon.


Add the chicken and cook until it changes colour.


Add tomatoes. Cook for about ten minutes until tomatoes are soft, mash them with the back of a spoon to make a paste.


Add  fennel and methi seeds, red  chilli pepper,  turmeric and salt, Cook till chicken is tender.



Add about one and a half cup of water and cook with the lid covered.The rogan josh is ready when oil comes on top of the gravy.


Sprinkle with garam masala and serve.
