Crispy, Spicy Roasted Chickpeas

You might have tried different recipes for cooking chickpeas, be it the famous hummus, chickpea curry or the popular Spanish chickpea soup, there are several different ways of cooking a single ingredient in every part of the world.

It is this versatility of food and the cooking methods that amaze me. Today I will be sharing a very easy and delicious recipe for cooking chickpeas. I like chickpeas in every form, but these roasted chickpeas have become an all time favorite after I tried them.

Don't be surprised if you ate the whole bunch without realizing, at least they will make you forget your cookie jar or a bar of chocolate while you eat them. Roasted Chickpeas are a very high fiber high protein snack. So after you roast them place them beside your cookie jar and I bet you will reach for the crunchy spicy chickpeas instead of your calorie loaded cookie.

The procedure is rather simple I just wash and dry my already boiled chickpeas slather some oil and spices and pop in the oven and 15 to 20 minutes later you have the most alluring and healthy snack in the world. The key to making perfectly crunchy chickpeas is to dry them very thoroughly before placing in the oven. So that they are completely coated with the spice and oil mixture.

 The kind of spices you use is subjective you can use just salt or the spice mix of your choice or the spices that I will suggest in the recipe guide. If you have the time on hand you can boil the chickpeas by yourself. If on the other hand you are short on time like me, feel free to use canned chickpeas. Just make sure that you soak them overnight before boiling.

So follow my step by step recipe guide for making crispy crunchy roasted chickpeas.

Ingredients:
400g chickpeas boiled and drained
1 tsp oil
1 tsp cumin powder
1 tsp red chili pepper
1/4 tsp brown sugar (optional)
salt to taste

Method:

Drain the chickpeas in a colander.


Spread on a paper towel place another paper towel on top and tap to remove moisture. The trick to making crispy chickpeas is to remove as much moisture as possible.


Mix all the spice ingredients including sugar, sprinkle over the chickpeas and shake or mix with hand to coat the spice mixture on the chickpeas.



Spread the chickpeas evenly on the baking tray and place in a preheated oven. Bake at 400 degrees F for 35 -40 minutes till crispy and golden brown. This is a very healthy high fiber, high protein snack.
